agua fr\u00eda durante 7 a 10 minutos.<\/p>\n<p>03.<br \/>Engrasa muy bien un molde con chimenea y res\u00e9rvalo.<\/p>\n<p>04.<br \/>Escurre los frutos del bosque y reserva el alm\u00edbar.<br \/>Pesa 450 g de fruta y a\u00f1ade el resto al alm\u00edbar.<\/p>\n<p>05.<br \/>Coloca los 450 g de fruta en un cazo con el agua y el az\u00facar.<br \/>Cocina a fuego suave durante 5 minutos, removiendo.<\/p>\n<p>06.<br \/>Tritura con batidora, a\u00f1ade las gelatinas hidratadas y escurridas y mezcla hasta disolver completamente.<br \/>Deja enfriar.<\/p>\n<p>07.<br \/>Monta la nata con el zumo de lim\u00f3n hasta que est\u00e9 firme.<br \/>A\u00f1\u00e1dela a la mezcla anterior cuando est\u00e9 fr\u00eda e integra bien.<\/p>\n<p>08.<br \/>Monta las <strong>Claras de Huevo DOVO<\/strong> a punto de nieve firme, a\u00f1ade 3 cucharadas de az\u00facar y bate un poco m\u00e1s.<\/p>\n<p>09.<br \/>Incorpora las claras a la mezcla anterior con movimientos suaves, asegurando una textura homog\u00e9nea.<\/p>\n<p>10.<br \/>Vierte la mezcla en el molde y refrigera durante 6 horas.<\/p>\n<p>11.<br \/>Para desmoldar, introduce el molde unos segundos en agua caliente y desmolda.<br \/>Refrigera 15 minutos m\u00e1s.<\/p>\n<p>12.<br \/>Para la salsa, mezcla la fruta con el alm\u00edbar, 2 cucharadas de az\u00facar y la maicena.<br \/>Tritura y lleva al fuego hasta que espese.<\/p>\n<p>13.<br \/>Deja enfriar completamente y vierte sobre la bavaroise.<br \/>Sirve fr\u00eda en
